Queijo Coalho Two Ways

I took my favorite beach snack from Rio and turned it into a super easy at home recipe. The closest cheese you can find in the US to the OG Coalho is Halloumi, a mediterranean cheese with a high melting point (read it grills!).

The image depicts a hand picking up a skewer with decorative watermelon slice from a wooden board with stacked cheese appetizers, with more skewers in the background.

Equipment:

Air Fryer

Knife

Cutting Board

Toothpicks (for serving)

Ingredients:
2 blocks of Halloumi Cheese

1-2 teaspoons dry oregano

Mikes Hot Honey or regular honey

1/4 cup shelled and chopped roasted pistachios

Servings: 6-10 for Appetizers

Active Time: 10 minutes

Total Time: 20 minutes

Steps

Pre heat the air fryer to 350 degrees

Slice the cheese into ½ inch thick slices and about 1-2 inches long

Bake in two batches for approximately 10 - 12 minutes (time may vary by air fryer)

Note: I have an Our Place Wonder Oven; in this style Air Fryer I rotated my tray at 6 minutes and left them in for a total of 12 minutes.

Note: No air-fryer? These can go on a grill or hot pan instead!

Remove from the Air Fryer and onto a serving plate

Season the first batch with oregano

For the second batch, drizzle with honey then top with ¼ cup chopped pistachios

Serving Suggestion:
Serve with a fresh juice or a cold beer
