Minted Pea Patties

 

Meatless Monday was started by Sid Lerner, a famed Madison Avenue marketer, in association with the Johns Hopkins Bloomberg School of Public Health. Lerner was considered one of the original “Mad Men” and this campaign was one brilliant stroke of messaging genius. Rather than asking for a numerical and calculated reduction in saturated fat or meat consumption, he proposed a consolidated day of no meat, a clear and actionable plan that doesn’t require much effort. Some twenty years later, Meatless Monday is a lifestyle choice many people still make and advocate for.

I don’t plan enough in advance to religiously follow Meatless Monday, but I do love a hearty and delicious vegetarian meal. These Minted Pea Fritters are so satisfying you won’t even notice you were missing something on your plate. The hint of mint makes them light and refreshing, and it’s an excellent companion to rice and beans. Other vegetarian proteins I use are falafels and halloumi cheese. I haven’t crossed into Impossible burger land but if you want to make a case for them, just let me know!

 
Minted Pea Patties

Minted Pea Patties

Servings: 4 (2 Patties per serving)

Ingredients

  • 2 tbsp olive oil
  • 2 cups thawed green peas, divided
  • 1 garlic clove
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup rice flour or cassava flour
  • 3 tbsp nutritional yeast (optional)
  • 1 tbsp lemon zest
  • 1 tbsp chopped mint
  • 1/2 tsp baking powder

Instructions

  1. Blend half of the peas with the garlic, eggs, salt, and pepper in a food processor or blender.
  2. Add the flour, nutritional yeast (if using), lemon zest, mint, and the baking powder.
  3. Add the other half of the peas.
  4. Shape into fritters or burgers so you have 8.
  5. Heat the olive oil in a pan over medium heat and grill until golden brown.
  6. Cook all the batter, serve or freeze for a later date.
