Pão de Queijo Fit (Brazilian Cheese Bread)

Ingredients

  • 1/2 cup of Monterey Jack cheese, grated
  • 2 eggs, beaten
  • 1 tablespoon olive oil
  • 2 tablespoons of ricotta
  • 1 cup of tapioca starch
  • 1/2 tsp salt
  • Cooking spray or extra oil for coating muffin tins

Instructions

  1. Mix all ingredients in a large bowl
  2. Coat your muffin tins with cooking spray
  3. Divide mix into 8 muffin cups
  4. Bake at 400 degrees for 15 - 20 minutes until golden

Serving Suggestion:

With an espresso for a perfect afternoon snack.
