Pão de Queijo Fit (Brazilian Cheese Bread)

Pão de Queijo Fit (Brazilian Cheese Bread)

Ingredients
- 1/2 cup of Monterey Jack cheese, grated
- 2 eggs, beaten
- 1 tablespoon olive oil
- 2 tablespoons of ricotta
- 1 cup of tapioca starch
- 1/2 tsp salt
- Cooking spray or extra oil for coating muffin tins
Instructions
- Mix all ingredients in a large bowl
- Coat your muffin tins with cooking spray
- Divide mix into 8 muffin cups
- Bake at 400 degrees for 15 - 20 minutes until golden
Serving Suggestion:
With an espresso for a perfect afternoon snack.
