Passion Fruit Cooler (Suco de Maracujá Refrescante)

I am not a huge juice drinker, but I love love love Passion Fruit Juice. It has long been something I have missed from my life since leaving Rio. My hosts in Rio add ginger to their passion fruit juice, and I love this twist. My recipe includes a pretty hefty amount of it... I personally want that kick and all the health benefits that come with it. They say ginger can boost your serotonin levels, so it’s no wonder this juice makes me so happy.

Passion Fruit Cooler (Suco de Maracujá Refrescante)

Ingredients

  • 12 ounces frozen passion fruit
  • 1 liter of coconut water
  • 1 (2 inch) knob of ginger
  • 1 tablespoon of honey

Instructions

  1. Use a pairing knife to peel and roughly chop the ginger
  2. Add all ingredients to a blender
  3. Blend for about 3 minutes
  4. Strain into serving pitcher if you wish to remove all pulp
  5. Store in the refrigerator for 5-7 days

Serving Suggestion:

Serve over ice on the side of your Prato Feito (The beloved PF lunch plate of rice, beans, meat and salad).
